We drink sparkling wines like they are going out of style ... which they aren't! Welcome to the new world of premium Oregon sparkling wine -- we use some of the oldest and best blocks of Pinot Noir/Pommard and Chardonnay to create the base wine, we make it 'methode champenoise' by creating a secondary ferment in bottle and then aging 'sur lie' for at least 2 years before disgorging and enjoying the lovely bubbles!
100% Estate Fruit, 94% old vine Pinot Noir and 6% 76 clone of Chardonnay, this is our latest disgorgement from our sparkling program (disgorged Sept. 2020). The nose is rich with brioche, caramel, and a kiss of butterscotch. The acidity and creaminess compliment each other, exuding persimmon, kumquat, and lemon meringue pie. Delicious! Enjoy for a special occasion or really, any random Thursday ... that's what we do! Cheers to bubbles!
Sourced from the Chehalem Mts AVA and Laurelwood soils, this is a classic Oregon sparkling wine. Methode champenoise production, 48% Pinot Noir, 47% Chardonnay, 5% Pinot Meunier. Aged 26 months sur lie, disgorged in July, 2019, with 6g of sugar. Very dry, balanced, and beautiful.
With a nose of honey and vanilla, this wine has a lovely racy underbelly of crisp lemon, bubbly enthusiasm spreading out on the tongue like a fresh grapefruit eaten with just the right amount of sugar.
